Chili Oil – The OG of Condiments

This recipe is an ultimate guide to preparing Chinese Chilli Oil at home. This Chilli Oil from Naz It Up’s kitchen truly transcends beyond Chinese cuisine. I use this chilli oil for dumplings, fried rice and even pizza. This ultimate homemade chilli oil has the goodness of dried aromatics like cinnamon, star anise and Sichuan Pepper and the goodness of scallions amongst the wet aromatics.

The recipe for this chilli oil is simple. Cook all the dry and wet aromatics in the oil on low flame for around 10 min, allowing the oil to infuse all the good of the herbs and spices. Once the fresh ingredients change their color to dark golden, take them off and add the chilli with a pinch of sea salt. Let the chilli sit with the aromatic oil for around 10 min on low flame. And the chilli oil is ready.

– 2 cups Oil (neutral vegetable oil)
– 8 tbsp Chilli Flakes
– 1 tsp Sichuan Peppercorns
– 25 gm Ginger
– 1 small Onion
– 4 Scallions
– 1 Star Anise
– 2 Bay Leaf
– Black Cardamom
1 Cinnamon Sea Salt
